Dark in colour, Casa Rinaldi’s PGI balsamic vinegar of Modena “Il Rosso” has a well-balanced, bittersweet flavour. It has a density of 1.4. “Il Rosso” is suitable for flavouring steamed and grilled vegetables, and for seasoning carpaccio. It goes perfectly well with red onions and tomatoes, but is also ideal in the preparation of sauces, dips and marinades. Its sweet and sour taste makes it an interesting product for flavouring shellfish.
